I would describe my dish as:
Fresh rice paper rolls filled with succulent prawns, crisp lettuce, and crunchy vegetables, served with a rich Singapore-style chilli crab dipping sauce made using JUMBO Seafood Chilli Crab Paste. A refreshing appetiser that combines the freshness of Vietnamese summer rolls with the bold flavours of Singapore’s iconic chilli crab.

Growing up in Singapore, chilli crab has always been one of my favourite local dishes. I wanted to recreate those familiar flavours in a lighter and more refreshing way, so I combined the bold taste of JUMBO Seafood Chilli Crab Paste with fresh Vietnamese-style rice paper rolls. Filled with juicy prawns, shredded chicken, crisp vegetables, and egg, these rolls are perfect for warm days or as a crowd-pleasing appetiser. The rich chilli crab dipping sauce brings everything together, giving every bite a delicious taste of Singapore with a refreshing twist.

* 1 cucumber, julienned
* 1 carrot, julienned
* 1 chicken breast (optional)
* Quail eggs (optional)
* Lettuce leaves

Here's how to cook it:
Instructions

1. Prepare the vegetables
*Julienne the cucumber and carrot.
*Lightly season with a pinch of salt and set aside.
*Allow to cool, then shred into thin strips.
2. Prepare the prawns
*Cook the prawns in boiling water until they turn pink and are fully cooked.
*Peel and set aside.
3. Prepare the chilli crab dip
*Cook the JUMBO Seafood Chilli Crab Paste according to the package instructions.
*Transfer to a serving bowl and allow it to cool slightly.
4. Assemble the rolls
*Soak a rice paper wrapper in warm water until softened.
*Place a lettuce leaf on the wrapper, followed by the cucumber, carrot, egg strips, shredded chicken, and prawns.
*Fold in the sides and roll tightly.
7. Serve
*Arrange the rolls on a serving plate.
*Serve with the warm chilli crab dipping sauce.
